This super quick and flavorful recipe with delicious gluten free meatballs, chunks of sweet pineapple and spicy bell peppers compliments most any favorite side dish but our favorite is a simple heaping bowl of fresh steamed rice and a few chopped spring onions to serve. Nothing beats simple and delicious!
- 20-24 Bolton Foods Meatballs
- 1 20oz Can Pineapple Chunks, Drained and Juices set aside
- 1⁄4 Cup White Table Vinegar
- 3 Tablespoon Soy Sauce
- 1 Tablespoon Worcestershire Sauce
- 3⁄4 Cup Brown Sugar, Packed
- 2 Garlic Cloves, Minced
- 2 Tablespoon Cornstarch
- 2 Cup Diced Bell Pepper
- 1⁄2 Cup White Onion
- Optional* Fresh steamed rice and diced green onion for garnish
Begin by placing frozen bolton foods gluten free meatballs into a lightly greased slow cooker along with diced bell peppers, onion and pineapple chunks.
Pour reserved pineapple juice into a measuring cup and add just enough water so that you have 1 1⁄2 cups of liquid and then add into a mixing bowl with brown sugar, cornstarch, white vinegar, soy sauce, worcestershire sauce along with salt and pepper to taste and whisk to combine. Pour mixture over meatballs and pineapple chunks in a slow cooker, cover and cook on low for 4-5 or until sauce has thickened. Serve over fresh steamed rice and garnish with sliced green onion if desired. Enjoy!
