Ingredients :

  1. 2 1⁄2 Wild Caught Sockeye Salmon
  2. 4 Garlic Cloves, Minced
  3. 1 Lemon, 1/2 Zested and Juiced , the other 1⁄2 Quartered Into Wedges For Serving
  4. 1⁄2 Cup High Quality Honey
  5. 1⁄4 Cup Butter Melted
  6. Sea Salt and Fresh Cracked Pepper To Taste
  7. 1⁄4 Cup Fresh Parsley, Chopped For Serving

Directions :

Start by positioning your baking rack in your oven to the middle level and then by preheating your oven to 375 degrees. Line a large baking tray with foil big enough to be able to fold over salmon filets and seal to create a packet. In a saucepan, set on low heat to melt and combine butter, honey and garlic and when well combined and slightly heated add lemon zest as well as juice, remove from heat and set aside.
Place salmon filets tin foil lined baking tray and pour over melted honey butter mixture, spread evening and sprinkle with sea salt and pepper to taste. Folding the sides of the tin foil creates a tent or packet around the wild caught sockeye salmon filet and seal so that steam, or moisture can not escape. Place into a 375 degree oven for approx 20 minutes ( Depending on thickness of filet). Carefully remove from the oven and peel back tin foil layers to expose the upper side of the fillet and place back into the oven and broil at high heat to slightly caramelize the top of your fillet ( 1-3 minutes.) Remove from the oven, allow to rest slightly before plating; garnish with chopped parsley and lemon wedges and serve alongside jasmine rice and crisp stir fried vegetables for a delicious and healthy main entree! Enjoy!
