Caprese Steak Salad

Healthy, delicious and way too easy with richly flavored Bolton Foods sandwich steak with a few simple ingredients this crowd pleaser comes together in minutes if you’re in a hurry, but being left in the marinade will develop a richer flavor. Steak salad is hearty enough to be the whole entree but with little to no carbs but high in protein and micronutrients. This recipe is a weekly favorite all summer long.

Ingredients:

  1. 2 – 5oz Portions Bolton Gold Angus Sandwich Steak
  2. 1⁄4 Cup Olive Oil
  3. 1⁄8 Cup Balsamic Vinegar
  4. 1 Teaspoon Mustard
  5. 1 Clove Garlic Minced
  6. 1 Head of Romaine, Torn Into Bite Sized Pieces
  7. 1 Pint Cherry Tomatoes, Halved Or Quartered
  8. 1 Cup Mozzarella Balls, Drained and Torn Into Bite Sized Pieces
  9. 1⁄2 Cup Fresh Basil, Torn Into Bite Sized Pieces
  10. 10. Kosher Salt, Fresh Cracked Pepper

Directions:

Begin by preparing your sandwich steak marinate by combining olive oil, vinegar, mustard, garlic, salt and pepper in a small mixing dish and divide into two parts. Part one is poured into a ziploc bag or shallow dish with your sandwich steak and toss to cover and set in the fridge for an hour or more until you are ready for dinner, the other half of the marinade will be the dressing for the salad once prepared. When ready for your meal heat a cast iron skillet over high heat with one tablespoon of olive oil and then carefully place marinated steak, cook without moving for 2-3 minutes to help caramelize and develop the flavors and then turn to brown the other side, once cooked through remove and set aside to rest while you prepare the rest of the salad. Toss together lettuce, tomatoes, mozzarella cheese and basil in a large bowl and add a couple tablespoons of reserved marinade at a time to just lightly dress. Place into serving bowls and top with equal amounts of delicious steak, top with additional basil leaves, drizzle of reserve marinade and fresh cracked pepper if desired. Enjoy! .
