Cranberry, Walnut and Brie Stuffed Turkey Breast

Bolton Foods Free Range Turkey breast works incredibly well for this stuffed turkey breast recipe, while being notoriously difficult to cook well, when a tendency for becoming dry this stuffing ensures a moist and flavorful protein that can be served all year round. Free Range Turkey has an impressive nutritional profile and is slightly lower in fat and calories making is a great healthful option for those wanting to curb unwanted weight gain and stay healthy.

Ingredients :

  1. 2 Free Range Bolton Foods Turkey Breasts, Thawed To Room Temperature
  2. 1⁄2 Crumbled Walnuts, Well Chopped
  3. 3⁄4 Cup Whole Cranberry Sauce, Plus Extra For Serving
  4. 150g Of Good Quality Brie, cut into 1cm Pieces
  5. 2⁄3 Cup Panko Crumbs
  6. 1⁄4 Cup Fresh Parsley, Chopped
  7. 3 Garlic Cloves, Minced
  8. 2 Tablespoon Fresh Chive, Finely Chopped
  9. 3 Tablespoon Whole Grain Mustard
  10. 1⁄4 Teaspoon Each Clove, Cinnamon, Onion Powder, Allspice, Sea Salt, Fresh Cracked Pepper
  11. 3 Tablespoon Vegetable Oil

Directions :

Begin by thawing and bringing free range turkey breast to room temperature and preheating your oven to 350. Line a large baking tray with parchment paper and set aside. Combine walnuts, fresh chopped parsley, chives, mustard, garlic, spices, cranberry sauce, chopped brie and breadcrumbs in a small dish and set aside.
Using a Sharp knife, split the free range turkey breast down the center to create a pocket to place the mixture inside, careful not to slice all the way through. Fill your free range turkey breasts with delicious cranberry, walnut and brie mixture and secure with 2-3 toothpicks and use kitchen string to pull together the sides to prevent filling from escaping.
Heat 1⁄2 your vegetable oil in a large skillet on medium high heat and add turkey breast to sear and brown each side ( approx 5-8 minutes) and transfer to baking tray and repeat with next stuffed free range turkey breast. Place the baking tray into the oven and cook for 1 hour to 1 hour 15 minutes or until turkey breasts are cooked through. Remove from the oven and rest covered for 10 minutes before slicing and serving with an extra side of cranberry sauce and garlic mashed potato and steamed seasonal greens for an out of this world comfort meal!
