Fresh and Healthy Spicy Shrimp Tacos

As the days get longer and the evenings are staying warm we all are enjoying the summer weather that has finally arrived. Fresh and healthy spicy shrimp tacos with creamy cilantro sour cream sauce and zesty avocado salsa are perfect for those meals when you want big flavor without heating up the house too much, best when shrimp is allowed to marinate for 12-24 hours and is perfect to put together on a Sunday for a quick weekday meal – a new fresh spin on taco Tuesdays are just what summer called for!

Ingredients : Shrimp Marinade

Avocado Salsa

  1. 20-25 Medium Shrimp Peeled and deveined
  2. 3 Tablespoon Olive Oil ( 1 for cooking )
  3. 2 Cloves Garlic, Chopped
  4. 1⁄2 Teaspoon each of Ground Cumin, Onion Powder, Chilli Powder, Smoke Paprika, Salt
  5. 1 Teaspoon Lime Juice
  6. 6-8 Corn or Flour Tortillas, Set aside for later
  1. 1 Ripe Avocado
  2. 1⁄4 Cherry Tomatoes, Quartered
  3. 1⁄4 Red Onion Diced
  4. 1 Jalapeno, Seeded and Chopped
  5. 1⁄2 teaspoon each Kosher salt and Fresh cracked Pepper
  6. 2 tablespoon Orange Juice
  7. 1 Tablespoon Each Fresh Orange and Lime Zest
  8. 1⁄4 Cup Fresh Cilantro, Chopped

Cilantro Sour Cream Sauce

  1. 1⁄2 Cup Sour Cream
  2. 3 Tablespoon Peeled, Seeded Cucumber, finely diced
  3. 2 Tablespoon fresh lime juice
  4. 2 Tablespoon Fresh Cilantro, Chopped

Directions

After allowing your shrimp 12-24 hours to marinate in the fridge, begin to cook the shrimp by preheating a large non-stick pan or cast iron skillet to medium high heat. Add 1 tablespoon of olive oil and your shrimp one by one, and try not to crowd , continue to cook 1-2 minutes each side until pink and thoroughly cooked ( about 5 minutes ). Turn off heat and squeeze some fresh lime juice over top. Bring the ingredients of avocado salsa together in a large bowl and stir to combine. Combine ingredients of cilantro sour cream sauce in a small bowl while preheating the grill pan to medium high heat or turning on the barbeque for a moment – toast tortillas over grill pan, or let the fire of the barbeque lightly touch the tortillas until slightly crispy at the sides. Generously add the delicious avocado salsa to the freshly toasted tortillas and top with 3-4 spicy shrimp each before adding a dollop of cilantro sour cream! Serve with fresh lime wedges and extra cilantro on the side! Enjoy !
