- 1 lb Ground Veal, Thawed
- 2 Tablespoons Greek Seasoning
- 8 Ounces Frozen Chopped Spinach, Thawed and Pressed To Remove Water
- 1⁄3 Cup Feta Cheese
- 3 Tablespoons Kalamata Olives, Minced
- 1⁄2 Teaspoon Pepper
- 1 Tablespoon Olive Oil
- 6-8 Skewers ( If Using Wood, Pre-Soak )
Begin by preheating the oven to 350 degrees and lining a large baking sheet with parchment paper. In a medium mixing bowl combine ground veal, spinach, greek seasoning, minced kalamata olives and feta cheese; divide mixture into 6-8 skewers and shape each portion evenly into a slight log shape using the skewer as the center. Place each skewer on the lined baking dish and lightly brush with olive oil and season with a sprinkle of salt and pepper if desired. Cook in a preheated 350 oven for 20-25 minutes until golden brown and cooked through ( 160 degree internal temperature.) Remove from the oven and allow to cool slightly before serving beside fresh steamed pita bread, hummus and tzatziki sauce for a fun Greek inspired dinner!
