Maritime Lobster Tail and Corn Chowder

Nothing tastes as luxurious and comforting as this warm creamy Maritime Lobster Tail and Corn Chowder. This humble yet decadent chowder is surprisingly easy to pull together; this dish is perfect for entertaining or on those cold seasonal evenings for the whole family!

Ingredients:

  1. 3 Bolton Foods Maritime Lobster Tails ( approx 15 oz )
  2. 1 Cup Corn Kernels
  3. 1 Vidalia Onion, finely diced
  4. 1⁄2 Cup Celery, diced
  5. 1⁄2 Cup Carrot, shredded
  6. 3-4 Slices Bacon
  7. 3 Cloves Garlic, finely diced
  8. 1 Cup White Potatoes, Diced
  9. 1 Cup Vegetable broth
  10. 1 1⁄2 Cup Half and Half or Whipping cream
  11. 1 Can Evaporated Milk
  12. 1 Teaspoon Smoked Paprika
  13. 1⁄2 Teaspoon Cayenne Pepper
  14. 1⁄2 Teaspoon Nutmeg
  15. 4 Tablespoons Fresh Chives, chopped

Directions:

In a large deep saucepan cook bacon on medium high heat until crisp, remove cooked bacon and set aside. Add to the saucepan with bacon drippings, vidalia onion, celery, carrots and cook on medium heat until slightly softened. Next, add the diced garlic and cook until softened. Continue by adding potatoes and corn to the tender vegetables and cook for an additional 5 minutes. Stir in half and half, vegetable broth, evaporated milk, 3⁄4 of reserved cooked diced bacon along spices and bring to boil for 10-15 minutes until potatoes are tender. Serve immediately and top with diced fresh chives, the rest of your reserved bacon and freshly grated nutmeg if desired!
