The Perfectly Grilled Berkshire Pork Chop with Maple Merlot Sauce

  1. 4 Bolton Foods Berkshire Pork Chops
  2. 3 cup of Beef Broth 1 cup of Merlot Wine
  3. 3 Tablespoons of Good quality Maple Syrup
  4. 1 Tablespoon of Cornstarch
  5. ¼ Cup of Water Olive Oil
  6. Kosher Salt and Freshly ground Pepper


Begin by preparing the sauce, bring beef broth and wine to a low simmer until it reduces by ⅓ of volume; meanwhile prepare in a bowl a slurry of cornstarch, water, maple syrup. Whisk the slurry into the Merlot and broth mixture and continue whisking until the mixture thickens. Set on low heat to keep warm.

To cook Bolton Foods Berkshire Pork chops begin by placing a cast iron skillet or metal grill pan to medium high heat. Massage the pork chops with olive oil and season with kosher salt and freshly cracked pepper. Place on grill pan several inches apart, brush with Olive oil and cook until just slightly pink in the center. Transfer to a plate and cover with an aluminum foil tent for 5 minutes.

To the Grilled Berkshire Pork Chops add Freshly roasted sweet potato and garden fresh green beans, spoon the incredible maple syrup merlot sauce over top and serve!
