Unbelievable Caprese Pork Chops with Balsamic Glaze

Juicy, tender and flavorful bone-in chops marinated in a rich combination of balsamic vinegar, honey, dijon mustard and garlic ensures every bite has melt in your mouth flavor. Topped with fresh creamy mozzarella, fresh tomatoes and herbs and finished with a balsamic glaze this delicious combination of caprese and pork chops is sure to be a new favorite. Ingredients

1. 4 Frenched Bone, Grain Fed Bolton Foods Pork Chops
2. 1⁄2 Cup Balsamic Vinegar
3. 3 Tablespoons Honey
4. 2 Tablespoons Grainy Dijon Mustard
5. 4 Garlic Cloves, Minced
6. 2 Large Roma Tomatoes
7. 8 Slices Fresh Mozzarella, cut 3⁄4” thick
8. 1⁄3 Cup Fresh Basil, Chopped
9. 1⁄3 Cup Balsamic Glaze
10. 3 Tablespoon Olive Oil
11. Kosher Salt and Fresh Cracked Pepper

Directions

Begin by combining balsamic vinegar, honey, dijon mustard garlic and salt and pepper in a medium bowl or baking dish , adding pork chops massage slightly to ensure they are each thoroughly covered. Place the dish covered in the fridge for a minimum of 45 minutes.

Next preheat your oven to 400 Degrees, while also preheating a large oven safe skillet ( cast iron is preferred ) on medium high heat with 3 tablespoons of olive oil. When oil is hot add marinated pork chops one at a time with at least 1” space between, sear each side until golden brown ( approx 5 minutes each side ).

Top each golden pork chop with 2 slices of fresh mozzarella, transfer the skillet to a preheated oven at 400 degrees and cook until cheese is melted and pork is cooked through ; approx 10 minutes. Remove the skillet from the oven carefully and top each delicious pork chop with fresh slices of tomato, a rough handful of fresh chopped basil and drizzle each with 1-2 tablespoons of balsamic glaze, serve immediately! Serve alongside crispy homemade chips and fire roasted vegetables for a complete mouthwatering entree.
