We are always looking for new ways to create delicious and healthy meals from chicken breasts, this is a recipe that combines two of our favorite things with a healthy twist! Perfect for after athletics high in protein and saturated fats with a healthy dose of carbohydrates and some veggies it will be too easy to get your teenagers to devour this with no complaints! It makes the perfect addition to BBQ season too!
- 4 Free Range, Organic Chicken Breasts, thawed
- 4 Whole Grain Bakery Buns
- 4 Slices Mozzarella
- 16 Slices Pepperoni
- 1 Cup Of Your Favorite Thick Marinara Sauce
- 1⁄4 Teaspoon Each Crushed Red Pepper Flakes, Dried Oregano , Dried
Basil , Cracked Black Pepper, Garlic Powder
- 1⁄4 Cup Parmesan Cheese
- Fresh Basil Leaves
- Optional* Red Onion Slices, Sliced Tomato For Garnish
Heat a large skillet to medium high heat and add oil, when oil is heated and pan is hot add chicken breasts and cook 3-4 minutes each side before turning. While your chicken breast is cooking, combine marinara sauce, parmesan cheese and spices in a medium mixing bowl and toast buns slightly if desired. When both sides of the chicken breast are a nice golden brown top each breast with a mozzarella slice and turn off heat and leave to melt slightly. Top each bun with the chicken breast and give a generous spoonful of your sauce mixture, garnish with torn basil leaves, tomato and onion slices if desired and serve with your favorite seasonal side!
