- 1lb Bolton Foods Lean Ground Beef, Thawed
- 4 Large Russet Potatoes
- 1 Small Onion, Chopped finely
- 1 Packet Taco Seasoning
- 1⁄4 Cup Water
- 1⁄2 Sour Cream, Plus more for serving
- 1⁄4 CupMilk
- 1 1⁄3 Cup Shredded Cheddar Cheese
- 4 Green Onions, Sliced
- 3⁄4 Cup Salsa
Directions
Begin by preheating your oven to 475 degrees, scrubbing your potatoes and pricking several times to aid uniform cooking. Bake Potatoes for 60-75 minutes or until soft. While potatoes are cooking in the oven, heat a large skillet on medium high heat and brown ground beef and onion, adding taco seasoning and water, cook for 3 more minutes while stirring continuously and then remove from heat, allowing to cool slightly. When potatoes are tender, remove from the oven and allow to cool for 20 minutes, remove the top layer from each potato and scoop out cooked pulp out leaving behind a shallow line for structure. Place potato in a large bowl and combine sour cream, milk and mash until smooth, stir in prepared ground beef taco mixture and fold in 3⁄4 grated cheddar cheese. Stuff the potato and ground beef mixture back into the skins and place in a baking dish, and sprinkle remaining cheese on top. Place back into the oven at 375 degrees and bake 20-25 minutes or until cheese is golden brown and bubbly. Remove from the oven and serve by topping with sliced green onions, salsa and a dollop of sour cream! Enjoy!
