Southern Style Creole Pork Chops

Ingredients

  1. 4 8oz Bolton Foods Grain Fed Pork Chops, Thawed
  2. 1 8oz can Tomato Sauce
  3. 3 Tablespoon Vegetable Oil
  4. 1⁄2 Cup White Onion, Chopped
  5. 1⁄2 Cup Green Bell Pepper, Chopped
  6. 1⁄4 Cup Celery, Chopped
  7. 1⁄4 Cup Corn
  8. 4 Cloves Garlic, Minced
  9. 1 Tablespoon Worcestershire Sauce

Creole Spice Dry Rub*

Combine 1⁄2 Teaspoon each Salt, Dried Basil, Smoked Paprika, Ground Cumin, Onion Powder, Garlic Powder, Dried Thyme, Cayenne Powder and White Pepper along with 2 tablespoons brown sugar.

Directions

Begin by allowing your Bolton Foods grain fed pork chops to come to room temperature, and combine our Creole Spice Dry Rub in a small dish. Rub both sides of each of the 4 8oz Pork chops with dry rub mixture and place a large cast iron skillet with 3 tablespoons of vegetable oil on the stove to medium heat. Add pork chops to skillet one at a time and allow to brown lightly for 3-5 minutes before turning. Next add minced garlic, chopped onion, green pepper, celery and corn and allow to sweat a little before continuing. Add Tomato sauce and Worcestershire and set to low heat for 4-5 minutes or until pork reaches internal temperature of 145*.
